For Past Employee details you can use Reference personnel no. while hiring the Employee in the new company It 0031.
Need some data:
Why can't you transfer the Employee instead of hiring in the company ?
if you are hiring the emp. in your company how this employee got salary ? is it from old company or present company ?
you can do like this also,
Hire the Employee in the new company with ref. personnel no. (old comp. personnel no.) and assign Pa/PSA/EG/ESG, position, payroll area and every IT's like a new employee. Store the Employee DOJ in the IT 0041 (DOJ in the old company) and while leaving you can calculate according to the date in the IT 0041.
for maintaining DOJ old company details, create a day type and date type and assigned to this employee.
